The bees collect our honey in the vicinity of Velp (Gld) and the Heatherhoney on the Posbank in the vicinity of Rheden.

 

We currently offer 3 different types of honey throughout the year:

- Spring honey

- Summer honey

- Heather honey

 

Spring honey is characterized by a light color and sweet taste. The bees collect this honey between the end of March and May. Spring honey is known for crystallizing quickly, also known as sugaring the honey. When this happens, the honey can be brought back to its original state by heating it (au bain marie) to 39 degrees. If you make the honey too hot, the healthy enzymes can be lost.

 

 

 

Summer honey that comes from us is mainly made from the nectar of the linden tree. This linden honey has a very pleasant full taste with a delicious sweet aftertaste.
 

 

 

Heather honey is a very special honey that is characterized by a dark color and a very thick texture. The taste of this honey is very special, many times stronger than other honey with a somewhat bitter aftertaste. Heather honey is a thixotropic liquid: a liquid that takes on a solid form until it is set in motion. Think of ketchup. Ketchup also has a solid until you hit the bottle and the ketchup is set in motion, then the ketchup will flow. The same goes for honey from heather. This property makes it quite a challenge to harvest. It has a solid shape in the cells of the comb. The beekeeper will first have to "kolb" or move the honey before it can be harvested by the honey extractor. This process is very labor intensive. For that reason, heather honey is often a bit more expensive than other types of honey
